- 4 salmon fillets (6 ounces each)
- 2 cups fresh spinach, chopped
- 1 cup shredded mozzarella cheese
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon lemon zest
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1 lemon, sliced (for garnish)
- Preheat your oven to 375°F (190°C).
- In a skillet over medium heat, add olive oil and sauté the minced garlic for about 1 minute until fragrant.
- Add the chopped spinach to the skillet and cook until wilted, about 3-4 minutes. Season with salt, pepper, and lemon zest. Remove from heat.
- Place the salmon fillets skin-side down on a baking sheet lined with parchment paper.
- Spoon the sautéed spinach mixture evenly over each salmon fillet.
- Top each fillet with shredded mozzarella cheese.
- Sprinkle dried oregano over the cheese and drizzle a little more olive oil if desired.
- Bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.
- Garnish with lemon slices before serving.
Notes
- For a crispy topping, broil the salmon for the last 2-3 minutes of cooking.
- You can also substitute the mozzarella with feta cheese for a tangy twist.
- Consider adding cherry tomatoes or bell peppers to the spinach mixture for extra flavor and color.
