A delicious and healthy baked salmon recipe featuring sautéed spinach and melted mozzarella cheese.

  • 4 salmon fillets (6 ounces each)
  • 2 cups fresh spinach, chopped
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon lemon zest
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 lemon, sliced (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, add olive oil and sauté the minced garlic for about 1 minute until fragrant.
  3. Add the chopped spinach to the skillet and cook until wilted, about 3-4 minutes. Season with salt, pepper, and lemon zest. Remove from heat.
  4. Place the salmon fillets skin-side down on a baking sheet lined with parchment paper.
  5. Spoon the sautéed spinach mixture evenly over each salmon fillet.
  6. Top each fillet with shredded mozzarella cheese.
  7. Sprinkle dried oregano over the cheese and drizzle a little more olive oil if desired.
  8. Bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.
  9. Garnish with lemon slices before serving.
