1 pound ground beef (80/20 blend)
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon Worcestershire sauce
1/2 cup shredded sharp cheddar cheese
4 hamburger buns
1/2 cup cooked and crumbled bacon
1/4 cup chopped fresh parsley
1/2 cup colcannon (mashed potatoes with cabbage)
1/4 cup Guinness beer (optional)
1 tablespoon olive oil
Lettuce, tomato, and onion for toppings
Instructions
In a large bowl, combine the ground beef, salt, pepper, Worcestershire sauce, and Guinness beer (if using). Mix until just combined, being careful not to overwork the meat.
Divide the mixture into four equal portions and shape them into patties, making a slight indentation in the center of each patty to prevent puffing during cooking.
Heat olive oil in a skillet or grill over medium-high heat. Cook the patties for about 4-5 minutes on each side for medium doneness, adding the cheddar cheese on top during the last minute of cooking to melt.
Toast the hamburger buns on the grill or in a toaster until golden brown.
Assemble the burgers by placing a patty on each bun, then topping with colcannon, crumbled bacon, and fresh parsley. Add lettuce, tomato, and onion as desired.
Serve immediately with your favorite sides, such as fries or a salad.
Notes
For a spicier kick, add some diced jalapeños to the beef mixture before forming the patties.
Swap out the cheddar for Irish blue cheese for a stronger flavor profile.
