2 to 3 pounds beef roast (chuck or round)
1/2 cup honey
1/4 cup Dijon mustard
1/4 cup soy sauce
1 tablespoon apple cider vinegar
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon black pepper
1/2 teaspoon salt
1 cup beef broth
1 medium onion, sliced
4 carrots, cut into chunks
4 potatoes, cut into chunks
Instructions
In a small bowl, whisk together honey, Dijon mustard, soy sauce, apple cider vinegar, garlic powder, onion powder, black pepper, and salt until well combined.
Place the sliced onion, carrots, and potatoes in the bottom of the slow cooker.
Season the beef roast with additional salt and pepper, then place it on top of the vegetables in the slow cooker.
Pour the honey mustard mixture over the beef roast, ensuring it is well coated.
Add the beef broth around the roast and vegetables.
Cover the slow cooker and cook on low for 8 hours or on high for 4 hours, until the beef is tender and easily shreds with a fork.
Once cooked, remove the roast and vegetables from the slow cooker. Let the roast rest for a few minutes before slicing or shredding.
Notes
For a spicier kick, add 1 teaspoon of crushed red pepper flakes to the honey mustard mixture.
Substitute the carrots and potatoes with seasonal vegetables like sweet potatoes or parsnips for a different flavor profile.
