1 ½ pounds Brussels sprouts, trimmed and halved
4 ounces bacon, chopped
3 tablespoons olive oil
3 tablespoons honey
1 teaspoon salt
½ teaspoon black pepper
1 teaspoon garlic powder
1 tablespoon balsamic vinegar
¼ cup chopped pecans (optional)
Instructions
Preheat your oven to 400°F (200°C).
In a large bowl, combine the halved Brussels sprouts, chopped bacon, olive oil, honey, salt, black pepper, and garlic powder. Toss until the Brussels sprouts are well coated.
Spread the mixture evenly on a large baking sheet in a single layer.
Roast in the preheated oven for 20-25 minutes, stirring halfway through, until the Brussels sprouts are tender and caramelized, and the bacon is crispy.
Remove from the oven and drizzle with balsamic vinegar. If using, sprinkle the chopped pecans on top for added crunch.
Serve warm as a side dish or appetizer.
Notes
For a spicy kick, add a pinch of red pepper flakes to the mixture before roasting.
Substitute maple syrup for honey for a different flavor profile.
