  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons honey
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 tablespoon vegetable oil
  • 1 red bell pepper, sliced
  • 1 cup snap peas
  • 1 cup broccoli florets
  • 2 green onions, sliced
  • 1 teaspoon sesame seeds (optional)
  • Cooked rice or quinoa, for serving

Instructions

  1. In a small bowl, whisk together honey, soy sauce, rice vinegar, garlic, and ginger. Set aside.
  2. Heat vegetable oil in a large skillet or wok over medium-high heat.
  3. Add the shrimp to the skillet and cook for 2-3 minutes, or until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
  4. In the same skillet, add the red bell pepper, snap peas, and broccoli. Stir-fry for about 4-5 minutes, or until the vegetables are tender-crisp.
  5. Return the shrimp to the skillet and pour the honey garlic sauce over the mixture. Stir well to combine and cook for an additional 2 minutes, allowing the sauce to thicken slightly.
  6. Remove from heat and garnish with sliced green onions and sesame seeds, if desired. Serve over cooked rice or quinoa.

  • For added heat, include a pinch of red pepper flakes or a dash of sriracha in the sauce.
