2 pounds boneless, skinless chicken breasts
1/2 cup Dijon mustard
1/4 cup honey
2 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon dried thyme
1 teaspoon paprika
1 tablespoon apple cider vinegar
Instructions
Preheat your oven to 375°F.
In a medium bowl, whisk together the Dijon mustard, honey, olive oil, minced garlic, salt, black pepper, thyme, paprika, and apple cider vinegar until well combined.
Place the chicken breasts in a large baking dish and pour the honey Dijon mixture over the chicken, ensuring each piece is well coated.
Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.
Remove the foil and bake for an additional 15-20 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F.
Let the chicken rest for 5 minutes before slicing and serving.
Notes
For a crispy finish, broil the chicken for the last 2-3 minutes of cooking.
You can substitute maple syrup for honey for a different flavor profile.
