2 pounds boneless, skinless chicken thighs
1/2 cup honey
1/4 cup soy sauce
1/4 cup fresh lemon juice (about 2 lemons)
2 tablespoons olive oil
4 cloves garlic, minced
1 teaspoon ground ginger
1/2 teaspoon black pepper
1/4 teaspoon red pepper flakes (optional)
1 tablespoon chopped fresh parsley (for garnish)
Instructions
Preheat the oven to 375°F (190°C).
In a large bowl, whisk together honey, soy sauce, lemon juice, olive oil, garlic, ginger, black pepper, and red pepper flakes until well combined.
Add the chicken thighs to the marinade, ensuring they are fully coated. Cover and marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavor.
Place the marinated chicken in a baking dish, pouring any remaining marinade over the top.
Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
For a caramelized finish, broil the chicken for an additional 2-3 minutes, watching closely to prevent burning.
Remove from the oven and let rest for 5 minutes before serving. Garnish with chopped parsley.
Notes
For a sweeter flavor, add an extra tablespoon of honey to the marinade.
Serve the chicken over rice or quinoa to soak up the delicious sauce.
