A delicious and easy recipe for homemade turkey breast pinwheels, perfect for lunch or a snack.

Ingredients

Scale
  • 2 large whole wheat tortillas
  • 8 ounces sliced turkey breast
  • 4 ounces cream cheese, softened
  • 1 cup fresh spinach leaves
  • 1 medium red bell pepper, thinly sliced
  • 1/2 cup shredded carrots
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Lay the whole wheat tortillas flat on a clean surface.
  2. In a small bowl, mix the softened cream cheese with garlic powder, onion powder, salt, and pepper until well combined.
  3. Spread an even layer of the cream cheese mixture over each tortilla, leaving a small border around the edges.
  4. Layer the sliced turkey breast evenly over the cream cheese on each tortilla.
  5. Add a layer of fresh spinach leaves, followed by the sliced red bell pepper and shredded carrots.
  6. Starting from one end, carefully roll the tortilla tightly into a log shape.
  7. Once rolled, use a sharp knife to slice the log into 1-inch pinwheels.
  8. Arrange the pinwheels on a serving platter and refrigerate for at least 30 minutes before serving to allow the flavors to meld.

Notes

  • For added flavor, try mixing in some chopped fresh herbs like dill or chives into the cream cheese.
  • Substitute the turkey with ham or roast beef for a different protein option, or use hummus instead of cream cheese for a vegetarian version.
