1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
1/2 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1 large egg
1/2 cup panko breadcrumbs
1/2 cup orange juice
1/4 cup soy sauce
1/4 cup honey
1 tablespoon rice vinegar
1 teaspoon grated fresh ginger
1 teaspoon cornstarch
2 tablespoons water
2 green onions, sliced (for garnish)
Sesame seeds (for garnish)
Instructions
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a shallow bowl, mix together the flour, salt, pepper, garlic powder, and onion powder.
In another bowl, whisk the egg until well beaten.
Place the panko breadcrumbs in a third bowl.
Dredge each piece of chicken in the flour mixture, then dip it in the egg, and finally coat it with panko breadcrumbs. Place the coated chicken pieces on the prepared baking sheet.
Bake the chicken bites for 15-20 minutes, or until golden brown and cooked through, flipping halfway through for even cooking.
While the chicken is baking, prepare the orange sauce. In a small saucepan over medium heat, combine the orange juice, soy sauce, honey, rice vinegar, and ginger. Bring to a simmer.
In a small bowl, mix the cornstarch with water until smooth, then stir it into the simmering sauce. Cook for an additional 2-3 minutes until the sauce thickens.
Once the chicken bites are done, remove them from the oven and toss them in the orange sauce until well coated.
Serve the orange chicken bites warm, garnished with sliced green onions and sesame seeds.
Notes
For a spicier kick, add a teaspoon of red pepper flakes to the orange sauce.
Substitute the chicken with tofu or cauliflower for a vegetarian option.
