1 cup cherry pie filling
8 oz cream cheese, softened
1/4 cup granulated sugar
1/2 tsp vanilla extract
1 tsp lemon juice
8 egg roll wrappers
1 egg, beaten (for sealing)
Cooking spray
Powdered sugar (for dusting)
Instructions
In a mixing bowl, combine the softened cream cheese, granulated sugar, vanilla extract, and lemon juice. Mix until smooth and creamy.
Lay an egg roll wrapper on a clean surface with one corner pointing towards you. Spoon 2 tablespoons of the cream cheese mixture onto the center of the wrapper. Top with 1 tablespoon of cherry pie filling.
Fold the bottom corner of the wrapper over the filling, then fold in the sides, and roll it up tightly to seal. Use a little beaten egg to seal the top corner. Repeat with the remaining wrappers and filling.
Preheat the air fryer to 375°F. Lightly spray the egg rolls with cooking spray.
Place the egg rolls in the air fryer basket in a single layer, making sure they are not touching. Cook for 8-10 minutes, flipping halfway through, until golden brown and crispy.
Remove from the air fryer and let cool slightly. Dust with powdered sugar before serving.
Notes
For a chocolate twist, add mini chocolate chips to the cream cheese mixture before filling the wrappers.
Substitute the cherry pie filling with other fruit fillings like blueberry or strawberry for different flavors.
