2 pounds boneless, skinless chicken thighs
1/2 cup honey
1/4 cup soy sauce
1/4 cup Dijon mustard
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon black pepper
1/4 teaspoon red pepper flakes (optional)
2 tablespoons olive oil
Chopped green onions for garnish (optional)
Instructions
Preheat your oven to 375°F (190°C).
In a medium bowl, whisk together honey, soy sauce, Dijon mustard, garlic powder, onion powder, black pepper, and red pepper flakes until well combined.
In a large oven-safe skillet, heat olive oil over medium-high heat. Add the chicken thighs and sear for about 3-4 minutes on each side until golden brown.
Pour the honey mixture over the seared chicken, ensuring each piece is well coated.
Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
Remove from the oven and let the chicken rest for 5 minutes. Garnish with chopped green onions if desired before serving.
Notes
For a spicier kick, add more red pepper flakes or a dash of hot sauce to the marinade.
Serve with steamed rice or quinoa to soak up the delicious sauce, or pair with a fresh salad for a lighter meal.
