- 1 teaspoon baking powder
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 2 large eggs
- 1 cup shredded mozzarella cheese
- 1/2 cup ricotta cheese
- 1/2 cup cooked and crumbled Italian sausage (or any protein of choice)
- 1/2 cup chopped bell peppers
- 1/4 cup grated Parmesan cheese
- 1/4 cup marinara sauce (for dipping)
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine almond flour, baking powder, garlic powder, Italian seasoning, and salt. Mix well.
- In a separate bowl, whisk together the eggs. Add the shredded mozzarella cheese and ricotta cheese to the eggs, mixing until well combined.
- Gradually add the dry ingredients to the wet ingredients, stirring until a dough forms.
- Divide the dough into two equal portions. Place each portion between two sheets of parchment paper and roll out into a circle about 1/4 inch thick.
- On one half of each circle, layer the cooked sausage, chopped bell peppers, and grated Parmesan cheese.
- Fold the other half of the dough over the filling and press the edges to seal. Use a fork to crimp the edges for a decorative touch.
- Transfer the calzones to the prepared baking sheet and bake for 15-20 minutes, or until golden brown.
