  • 1 cup pineapple juice
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 1/4 cup ketchup
  • 2 tablespoons apple cider vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 green onions, sliced (for garnish)
  • Sesame seeds (for garnish)

Instructions

  1. In a large bowl, whisk together the pineapple juice, soy sauce, brown sugar, ketchup, apple cider vinegar, garlic, ginger, black pepper, and red pepper flakes until well combined.
  2. Add the chicken thighs to the marinade, ensuring they are fully submerged. Cover and refrigerate for at least 2 hours, or preferably overnight for maximum flavor.
  3. Preheat your grill to medium-high heat. Remove the chicken from the marinade and discard the marinade.
  4. Grill the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F and the chicken is nicely charred.
  5. Once cooked, remove the chicken from the grill and let it rest for 5 minutes.
  6. Slice the chicken and serve it garnished with sliced green onions and sesame seeds.
