1 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
½ cup unsalted butter, softened
1 cup brown sugar, packed
2 large eggs
1 teaspoon vanilla extract
½ cup buttermilk
½ cup cream soda
1 teaspoon butter extract
For the frosting:
1 cup unsalted butter, softened
4 cups powdered sugar
2 tablespoons heavy cream
1 teaspoon vanilla extract
1 teaspoon butter extract
Pinch of salt
Caramel sauce for drizzling
Instructions
Preheat your oven to 350°F (175°C) and line a cupcake pan with paper liners.
In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
In a large bowl, beat the softened butter and brown sugar together until light and fluffy.
Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
In another bowl, combine the buttermilk, cream soda, and butter extract.
Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk mixture, starting and ending with the dry ingredients. Mix until just combined.
Divide the batter evenly among the cupcake liners, filling each about two-thirds full.
Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
Allow the cupcakes to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
For the frosting, beat the softened butter until creamy. Gradually add the powdered sugar, mixing on low speed until combined.
Add the heavy cream, vanilla extract, butter extract, and a pinch of salt. Beat on high speed for 2-3 minutes until fluffy.
Once the cupcakes are completely cool, frost them generously with the buttercream. Drizzle caramel sauce on top for an extra touch.
Notes
For a fun twist, try adding a sprinkle of sea salt on top of the caramel drizzle for a salted caramel flavor.
You can also substitute the cream soda with root beer for a different taste experience.
