1 pound large shrimp, peeled and deveined
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon paprika
Salt and pepper to taste
4 slices sourdough bread
4 ounces sharp cheddar cheese, sliced
4 ounces mozzarella cheese, sliced
2 tablespoons butter, softened
Fresh parsley, chopped (for garnish)
Instructions
In a medium bowl, combine the shrimp, olive oil, garlic powder, paprika, salt, and pepper. Toss to coat the shrimp evenly and let marinate for 15 minutes.
Preheat a grill or grill pan over medium-high heat. Once hot, add the marinated shrimp and grill for about 2-3 minutes on each side, or until they are pink and opaque. Remove from heat and set aside.
While the shrimp is grilling, heat a large skillet over medium heat. Spread butter on one side of each slice of sourdough bread.
Place two slices of bread, buttered side down, in the skillet. Layer with sharp cheddar cheese, grilled shrimp, and mozzarella cheese. Top with the remaining slices of bread, buttered side up.
Cook for 3-4 minutes or until the bottom is golden brown. Carefully flip the sandwiches and cook for an additional 3-4 minutes, until the other side is golden and the cheese is melted.
Remove from the skillet, slice in half, and garnish with chopped parsley before serving.
Notes
For a spicy kick, add a pinch of cayenne pepper to the shrimp marinade.
Substitute the shrimp with grilled chicken or vegetables for a different flavor profile.
