A delicious and healthy grilled salmon recipe topped with fresh mango salsa.

Ingredients

  • 4 salmon fillets (6 ounces each)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 ripe mango, diced
  • 1/2 red onion, finely chopped
  • 1 jalapeño, seeded and minced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • Salt to taste

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a small bowl, mix olive oil, garlic powder, paprika, salt, and pepper. Brush the mixture over both sides of the salmon fillets.
  3. In another bowl, combine diced mango, red onion, jalapeño, cilantro, lime juice, and a pinch of salt. Mix well and set aside.
  4. Place the salmon fillets on the grill and cook for about 4-5 minutes per side, or until the salmon flakes easily with a fork and has grill marks.
  5. Remove the salmon from the grill and let it rest for a couple of minutes.
  6. Serve the grilled salmon topped with the mango salsa.

Notes

  • For added flavor, marinate the salmon in the olive oil mixture for 30 minutes before grilling.
  • Substitute the mango with pineapple or peach for a different fruity twist in the salsa.
