- 4 salmon fillets (6 ounces each)
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 ripe mango, diced
- 1/2 red onion, finely chopped
- 1 jalapeño, seeded and minced
- 1/4 cup fresh cilantro, chopped
- Juice of 1 lime
- Salt to taste
- Preheat the grill to medium-high heat.
- In a small bowl, mix olive oil, garlic powder, paprika, salt, and pepper. Brush the mixture over both sides of the salmon fillets.
- In another bowl, combine diced mango, red onion, jalapeño, cilantro, lime juice, and a pinch of salt. Mix well and set aside.
- Place the salmon fillets on the grill and cook for about 4-5 minutes per side, or until the salmon flakes easily with a fork and has grill marks.
- Remove the salmon from the grill and let it rest for a couple of minutes.
- Serve the grilled salmon topped with the mango salsa.
Notes
- For added flavor, marinate the salmon in the olive oil mixture for 30 minutes before grilling.
- Substitute the mango with pineapple or peach for a different fruity twist in the salsa.
