2 slices of whole wheat bread
2 tablespoons creamy or crunchy peanut butter
1 medium ripe banana, sliced
1 tablespoon honey (optional)
1 tablespoon unsalted butter
Instructions
Preheat a skillet or griddle over medium heat.
Spread 1 tablespoon of peanut butter on one side of each slice of bread.
Layer the banana slices evenly over the peanut butter on one slice of bread. Drizzle honey on top if desired.
Place the other slice of bread on top, peanut butter side down, to form a sandwich.
Melt 1 tablespoon of butter in the preheated skillet.
Carefully place the sandwich in the skillet and cook for about 3-4 minutes, or until the bottom is golden brown.
Flip the sandwich and add the remaining tablespoon of butter to the skillet. Cook for another 3-4 minutes until the other side is golden brown and the peanut butter is melty.
Remove from the skillet, let cool for a minute, then slice in half and serve warm.
Notes
For added flavor, sprinkle a pinch of cinnamon on the banana slices before closing the sandwich.
Try using almond butter or Nutella instead of peanut butter for a different taste.
