2 (6-ounce) salmon fillets
2 tablespoons olive oil
2 tablespoons fresh lemon juice
1 teaspoon lemon zest
2 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried thyme
Salt and pepper to taste
Lemon wedges for serving
Instructions
Preheat your grill to medium-high heat.
In a small bowl, whisk together olive oil, lemon juice, lemon zest, minced garlic, oregano, thyme, salt, and pepper.
Place the salmon fillets in a shallow dish and pour the marinade over them. Let them marinate for at least 15 minutes.
Once the grill is hot, lightly oil the grates to prevent sticking.
Place the salmon fillets skin-side down on the grill. Cook for about 6-8 minutes, then carefully flip and grill for an additional 4-6 minutes, or until the salmon flakes easily with a fork.
Remove from the grill and let rest for a couple of minutes before serving with lemon wedges.
Notes
For a spicy kick, add a pinch of red pepper flakes to the marinade.
You can also substitute the salmon with other fish like trout or tilapia for a different flavor.
