2 pounds boneless, skinless chicken breasts
1/4 cup olive oil
1/4 cup fresh lemon juice (about 2 lemons)
3 cloves garlic, minced
1 tablespoon dried oregano
1 tablespoon dried thyme
1 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon red pepper flakes (optional)
Lemon wedges and fresh herbs for garnish (optional)
Instructions
In a large bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, thyme, salt, black pepper, and red pepper flakes until well combined.
Add the chicken breasts to the marinade, ensuring they are fully coated. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or up to 4 hours for more flavor.
Preheat your grill to medium-high heat.
Remove the chicken from the marinade and let any excess drip off. Discard the marinade.
Place the chicken on the grill and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F.
Once cooked, remove the chicken from the grill and let it rest for 5 minutes before slicing.
Serve with lemon wedges and garnish with fresh herbs if desired.
Notes
For a smoky flavor, add a teaspoon of smoked paprika to the marinade.
Substitute the chicken breasts with thighs for a juicier result, adjusting the cooking time as needed.
