2 slices of bread (your choice: white, whole wheat, or sourdough)
1 cup cooked meatloaf, sliced (homemade or store-bought)
4 slices of cheddar cheese (or your favorite cheese)
2 tablespoons butter
1 tablespoon ketchup (optional)
1 tablespoon mustard (optional)
Instructions
Preheat a skillet over medium heat.
Spread 1 tablespoon of butter on one side of each slice of bread.
Place one slice of bread, butter side down, in the skillet. Layer with half of the cheese slices, followed by the meatloaf slices, and then the remaining cheese.
Top with the second slice of bread, butter side up.
Cook for about 4-5 minutes, or until the bottom slice is golden brown and the cheese begins to melt.
Carefully flip the sandwich and cook for another 4-5 minutes on the other side until golden brown and the cheese is fully melted.
Remove from the skillet and let it cool for a minute. If desired, spread ketchup and mustard on the inside before serving.
Notes
For added flavor, mix some herbs or spices into the meatloaf before cooking, such as garlic powder, onion powder, or Italian seasoning.
Try adding sautéed onions or mushrooms inside the sandwich for extra texture and flavor.
