1 cup Greek yogurt
½ cup honey
3 large eggs
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1 tablespoon lemon juice
1 pre-made pie crust (9-inch)
1 tablespoon butter (for greasing)
Powdered sugar (for dusting, optional)
Instructions
Preheat your oven to 350°F (175°C). Grease a 9-inch pie dish with butter.
In a large mixing bowl, combine the ricotta cheese, Greek yogurt, honey, eggs, vanilla extract, ground cinnamon, and lemon juice. Mix well until smooth and creamy.
Pour the filling into the prepared pie crust, spreading it evenly.
Bake in the preheated oven for 35-40 minutes, or until the filling is set and the top is lightly golden.
Remove from the oven and let it cool at room temperature for about 15 minutes.
If desired, dust with powdered sugar before serving. Slice and enjoy warm or chilled.
Notes
For added flavor, consider mixing in a handful of chopped nuts, such as walnuts or almonds, into the filling before baking.
Substitute maple syrup for honey for a different sweet flavor profile.
