2 pounds bone-in, skin-on chicken thighs
4 cloves garlic, minced
2 tablespoons fresh ginger, grated
1/4 cup soy sauce
2 tablespoons honey
1 tablespoon rice vinegar
1 tablespoon sesame oil
1 teaspoon black pepper
1 teaspoon salt
1 tablespoon olive oil
1/4 cup green onions, chopped (for garnish)
1 tablespoon sesame seeds (for garnish)
Instructions
Preheat your oven to 400°F (200°C).
In a large bowl, combine the minced garlic, grated ginger, soy sauce, honey, rice vinegar, sesame oil, black pepper, and salt. Mix well to create a marinade.
Add the chicken thighs to the bowl, ensuring they are well coated with the marinade. Let them marinate for at least 30 minutes, or up to 2 hours in the refrigerator for more flavor.
Heat the olive oil in a large oven-safe skillet over medium-high heat. Once hot, add the marinated chicken thighs, skin side down, and sear for about 5 minutes until the skin is golden brown.
Flip the chicken thighs over and transfer the skillet to the preheated oven. Bake for 25-30 minutes, or until the internal temperature reaches 165°F (75°C) and the juices run clear.
Remove the skillet from the oven and let the chicken rest for 5 minutes. Garnish with chopped green onions and sesame seeds before serving.
Notes
For a spicier kick, add 1 teaspoon of red pepper flakes to the marinade.
Serve with steamed rice or quinoa to soak up the delicious sauce.
