1 medium head of green cabbage, chopped (about 4 cups)
1 tablespoon olive oil
1 medium onion, diced
2 cloves garlic, minced
1 teaspoon caraway seeds
1 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon red pepper flakes (optional)
1 cup sour cream
1 tablespoon apple cider vinegar
1 package (16 ounces) potato dumplings (store-bought or homemade)
Fresh parsley, chopped (for garnish)
Instructions
In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
Add the minced garlic and caraway seeds to the pot, cooking for an additional minute until fragrant.
Stir in the chopped cabbage, salt, black pepper, and red pepper flakes (if using). Cook, stirring occasionally, until the cabbage is tender, about 10-15 minutes.
While the cabbage is cooking, prepare the potato dumplings according to package instructions or your homemade recipe.
Once the cabbage is tender, stir in the sour cream and apple cider vinegar. Mix well and heat through for about 2-3 minutes.
Serve the cabbage mixture topped with the cooked dumplings and garnish with fresh parsley.
Notes
For a smoky flavor, add diced bacon or smoked sausage to the onion and garlic mixture before adding the cabbage.
Substitute the sour cream with Greek yogurt for a lighter version, or use a dairy-free alternative for a vegan option.
