In a large oven-safe skillet, heat the olive oil over medium heat. Season the chicken breasts with salt and pepper, then add them to the skillet. Sear the chicken for about 5 minutes on each side until golden brown.
Add the minced garlic to the skillet and cook for 1 minute until fragrant.
Pour the diced tomatoes (with their juices) over the chicken. Sprinkle the oregano and basil on top. Bring the mixture to a simmer.
Transfer the skillet to the preheated oven and bake for 20 minutes.
Remove the skillet from the oven and sprinkle the shredded mozzarella cheese over the chicken. Return to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
Let the dish rest for 5 minutes before serving. Garnish with fresh basil leaves if desired.

For added flavor, marinate the chicken in olive oil, garlic, and herbs for 30 minutes before cooking.
You can substitute the mozzarella with provolone or gouda for a different cheese flavor.
