2 salmon fillets (6 ounces each)
1 bunch asparagus, trimmed
3 tablespoons olive oil
4 cloves garlic, minced
1 teaspoon lemon juice
1 teaspoon dried Italian herbs
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup grated Parmesan cheese
Lemon wedges, for serving
Instructions
Preheat your oven to 400°F (200°C).
Cut two large pieces of aluminum foil, each about 12 inches long.
In a small bowl, whisk together olive oil, minced garlic, lemon juice, Italian herbs, salt, and black pepper.
Place the asparagus in the center of each piece of foil. Drizzle half of the olive oil mixture over the asparagus.
Place a salmon fillet on top of the asparagus in each foil pack. Drizzle the remaining olive oil mixture over the salmon.
Sprinkle grated Parmesan cheese evenly over the salmon fillets.
Fold the sides of the foil over the salmon and asparagus to create a sealed packet.
Place the foil packs on a baking sheet and bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.
Carefully open the foil packs (watch out for steam) and serve with lemon wedges on the side.
Notes
For a spicy kick, add a pinch of red pepper flakes to the olive oil mixture.
Feel free to substitute the asparagus with other vegetables like bell peppers or zucchini for a different flavor profile.
