1 pound ground chicken
1 cup breadcrumbs
1/2 cup grated Parmesan cheese
1/2 cup chopped fresh parsley
1/4 cup milk
1/4 cup ketchup
2 cloves garlic, minced
1 large egg
1 teaspoon dried oregano
1 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon red pepper flakes (optional)
1/4 cup additional ketchup for topping
Instructions
Preheat your oven to 350°F.
In a large mixing bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, parsley, milk, 1/4 cup ketchup, minced garlic, egg, oregano, onion powder, salt, black pepper, and red pepper flakes if using. Mix until just combined, being careful not to overmix.
Transfer the meat mixture to a loaf pan and shape it into a loaf.
Spread the additional 1/4 cup of ketchup evenly over the top of the meatloaf.
Bake in the preheated oven for 45-55 minutes, or until the internal temperature reaches 165°F.
Let the meatloaf rest for 10 minutes before slicing.
Notes
For added moisture, consider mixing in 1/4 cup of finely chopped bell peppers or mushrooms.
If you prefer a spicier kick, mix in a teaspoon of hot sauce into the meat mixture.
