  • 4 tablespoons olive oil
  • 8 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 lemon, sliced
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F if baking. If grilling, preheat the grill to medium heat.
  2. Cut four large pieces of aluminum foil, about 12 inches long each.
  3. In a small bowl, mix together the olive oil, minced garlic, salt, pepper, oregano, and thyme.
  4. Place a salmon fillet in the center of each piece of foil. Drizzle the garlic mixture evenly over each fillet.
  5. Top each salmon fillet with lemon slices.
  6. Fold the sides of the foil over the salmon to create a sealed packet, ensuring no gaps for steam to escape.
  7. If baking, place the foil packets on a baking sheet and bake for 15-20 minutes, or until the salmon flakes easily with a fork. If grilling, place the packets directly on the grill and cook for 10-15 minutes.
  8. Carefully open the foil packets (watch out for steam) and garnish with fresh parsley before serving.
