Garlic Butter Mushroom Stuffed Chicken is a delicious and savory dish featuring tender chicken breasts stuffed with a creamy mushroom and cheese filling, perfect for a delightful dinner.

  • 2 large boneless, skinless chicken breasts
  • 1 cup mushrooms, finely chopped
  • 3 tablespoons unsalted butter, divided
  • 3 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1/2 cup cream cheese, softened
  • 1/4 cup shredded mozzarella cheese
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet over medium heat, melt 2 tablespoons of butter. Add the chopped mushrooms and cook until they are soft and browned, about 5-7 minutes.
  3. Add the minced garlic, salt, pepper, and thyme to the skillet. Cook for an additional 1-2 minutes until fragrant. Remove from heat and let cool slightly.
  4. In a mixing bowl, combine the mushroom mixture with the cream cheese and mozzarella cheese. Mix until well combined.
  5. Carefully slice a pocket into each chicken breast, making sure not to cut all the way through.
  6. Stuff each chicken breast with the mushroom and cheese mixture, securing the opening with toothpicks if necessary.
  7. In the same skillet, melt the remaining tablespoon of butter over medium-high heat. Add the stuffed chicken breasts and sear for 3-4 minutes on each side until golden brown.
  8. Transfer the seared chicken to a baking dish and bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through (internal temperature should reach 165°F).
  9. Remove from the oven and let rest for 5 minutes before removing toothpicks. Garnish with fresh parsley before serving.
