1 pound cod fillets, cut into strips
1/4 cup unsalted butter
4 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika
1/4 teaspoon red pepper flakes (optional)
1/4 cup sweet chili sauce
1 tablespoon lime juice
1 teaspoon lime zest
Fresh cilantro, for garnish
Instructions
In a large skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant, being careful not to burn it.
Season the cod strips with salt, black pepper, paprika, and red pepper flakes if using. Gently place the cod strips in the skillet and cook for about 3-4 minutes on each side, or until the fish is golden brown and flakes easily with a fork.
While the cod is cooking, in a small bowl, mix together the sweet chili sauce, lime juice, and lime zest. Set aside.
Once the cod is cooked, remove it from the skillet and place it on a serving platter. Drizzle the sweet chili lime sauce over the cod strips.
Garnish with fresh cilantro before serving.
Notes
For a crispy texture, coat the cod strips in a light layer of breadcrumbs before cooking.
Substitute the cod with other white fish like tilapia or haddock for a different flavor profile.
