2 bone-in pork chops (about 1 inch thick)
1 tablespoon olive oil
1 medium onion, thinly sliced
2 cloves garlic, minced
1 teaspoon dried thyme
1 teaspoon salt
1/2 teaspoon black pepper
1 cup beef broth
1 tablespoon Worcestershire sauce
1 cup shredded Gruyère cheese
Fresh parsley, chopped (for garnish)
Instructions
Preheat your oven to 375°F (190°C).
In a large oven-safe skillet, heat the olive oil over medium heat. Add the sliced onions and cook, stirring frequently, until they are caramelized and golden brown, about 15-20 minutes.
Add the minced garlic, thyme, salt, and pepper to the onions. Cook for an additional 1-2 minutes until fragrant.
Push the onions to the side of the skillet and add the pork chops. Sear the chops for about 3-4 minutes on each side until browned.
Pour in the beef broth and Worcestershire sauce, bringing the mixture to a simmer.
Spoon some of the onion mixture over the pork chops, then sprinkle the shredded Gruyère cheese on top.
Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the pork chops reach an internal temperature of 145°F (63°C).
Remove from the oven and let the pork chops rest for 5 minutes before serving. Garnish with chopped parsley.
Notes
For a lighter version, use boneless, skinless chicken breasts instead of pork chops.
Add sliced mushrooms to the onions for extra flavor and texture.
