  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 large onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 cup shredded Swiss cheese
  • 1/4 cup fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, heat the olive oil over medium heat. Season the chicken breasts with salt and pepper, then add them to the skillet. Sear the chicken for about 5 minutes on each side until golden brown. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add the sliced onion and cook for about 10 minutes, stirring occasionally, until the onions are caramelized and golden brown. Add the minced garlic and thyme, cooking for an additional 1-2 minutes until fragrant.
  4. Pour in the beef broth and Worcestershire sauce, stirring to combine. Bring the mixture to a simmer and let it cook for 5 minutes.
  5. In a baking dish, arrange the seared chicken breasts. Pour the onion and broth mixture over the chicken, ensuring it is well coated.
  6. Sprinkle the shredded Swiss cheese evenly over the top of the chicken and onion mixture.
  7. Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the chicken is cooked through and the cheese is bubbly and golden.
  8. Remove from the oven and let it rest for 5 minutes. Garnish with fresh parsley before serving.
