2 cups chickpea flour
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon dried oregano
1 teaspoon dried basil
1/4 teaspoon black pepper
1 cup warm water
2 tablespoons olive oil
Fresh herbs (e.g., parsley or chives), chopped (optional, for garnish)
Instructions
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a large mixing bowl, combine the chickpea flour, baking powder, salt, garlic powder, onion powder, oregano, basil, and black pepper. Mix well to ensure all dry ingredients are evenly distributed.
Gradually add the warm water and olive oil to the dry mixture, stirring until a smooth batter forms. The batter should be thick but pourable.
Let the batter rest for about 10 minutes to allow the chickpea flour to hydrate.
Using a spoon or ice cream scoop, drop rounded tablespoons of the batter onto the prepared baking sheet, spacing them about 2 inches apart.
Bake in the preheated oven for 20-25 minutes, or until the rolls are golden brown and a toothpick inserted into the center comes out clean.
Remove from the oven and let cool for a few minutes before serving. Garnish with fresh herbs if desired.
Notes
For a cheesy flavor, add 1/2 cup of grated Parmesan cheese or nutritional yeast to the batter before baking.
Experiment with different herbs and spices, such as rosemary or thyme, to customize the flavor to your liking.
