  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 1 large egg
  • 2 tablespoons unsalted butter, melted
  • 1/2 teaspoon vanilla extract
  • 1/2 cup pecans, chopped
  • Butter or oil for cooking

Instructions

  1. In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, combine the buttermilk, egg, melted butter, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined; do not overmix.
  4. Gently fold in the chopped pecans.
  5. Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or oil.
  6. Pour about 1/4 cup of batter for each pancake onto the skillet.
  7. Cook until bubbles form on the surface, about 2-3 minutes, then flip and cook for an additional 1-2 minutes until golden brown.
  8. Repeat with the remaining batter.
  9. Serve warm with maple syrup, additional chopped pecans, or whipped cream.

Notes

  • For a richer flavor, try adding a pinch of cinnamon to the batter.
