2 tablespoons olive oil
1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
1 teaspoon salt
1/2 teaspoon black pepper
1 large onion, thinly sliced
2 cloves garlic, minced
1 cup long-grain white rice
2 cups chicken broth
1 tablespoon Worcestershire sauce
1 teaspoon dried thyme
1 cup shredded Swiss cheese
Fresh parsley, chopped (for garnish)
Instructions
In a large skillet, heat the olive oil over medium-high heat. Add the chicken pieces, season with salt and pepper, and cook until browned, about 5 minutes. Remove the chicken from the skillet and set aside.
In the same skillet, add the sliced onion and cook, stirring frequently, until caramelized, about 8-10 minutes. Add the minced garlic and cook for an additional minute.
Stir in the rice, chicken broth, Worcestershire sauce, and dried thyme. Bring to a boil, then reduce the heat to low. Return the chicken to the skillet, cover, and simmer for 15 minutes or until the rice is tender and has absorbed the liquid.
Remove the skillet from heat and sprinkle the shredded Swiss cheese on top. Cover for 2-3 minutes until the cheese is melted.
Garnish with chopped parsley before serving.
Notes
For added flavor, consider using a splash of white wine when caramelizing the onions.
You can substitute the Swiss cheese with provolone or mozzarella for a different taste.
