- 1 pound elbow macaroni
- 4 cups sharp cheddar cheese, shredded
- 1 cup mozzarella cheese, shredded
- 1 cup gouda cheese, shredded
- 1 cup parmesan cheese, grated
- 1 cup cream cheese, softened
- 4 cups whole milk
- 1/2 cup unsalted butter (1 stick)
- 1/2 cup all-purpose flour
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 1 cup breadcrumbs (optional, for topping)
- 2 tablespoons olive oil (optional, for breadcrumbs)
- Preheat your oven to 350°F (175°C).
- Cook the elbow macaroni according to package instructions until al dente. Drain and set aside.
- In a large saucepan over medium heat, melt the butter. Once melted, whisk in the flour and cook for about 2 minutes to create a roux.
- Gradually add the whole milk to the roux, whisking constantly until the mixture thickens and is smooth, about 5-7 minutes.
- Stir in the garlic powder, onion powder, paprika, salt, and pepper.
- Remove the saucepan from heat and add the cream cheese, stirring until melted and combined.
- Add the shredded cheddar, mozzarella, gouda, and grated parmesan to the sauce, stirring until all the cheese is melted and the sauce is creamy.
- Combine the cooked macaroni with the cheese sauce, mixing well to ensure all pasta is coated.
- If using breadcrumbs, mix them with olive oil in a small bowl.
- Pour the macaroni and cheese mixture into a greased 9×13 inch baking dish. If desired, sprinkle the breadcrumb mixture evenly on top.
- Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbly.
- Let cool for about 5 minutes before serving.
