  • 1 pound elbow macaroni
  • 4 cups sharp cheddar cheese, shredded
  • 1 cup mozzarella cheese, shredded
  • 1 cup gouda cheese, shredded
  • 1 cup parmesan cheese, grated
  • 1 cup cream cheese, softened
  • 4 cups whole milk
  • 1/2 cup unsalted butter (1 stick)
  • 1/2 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup breadcrumbs (optional, for topping)
  • 2 tablespoons olive oil (optional, for breadcrumbs)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the elbow macaroni according to package instructions until al dente. Drain and set aside.
  3. In a large saucepan over medium heat, melt the butter. Once melted, whisk in the flour and cook for about 2 minutes to create a roux.
  4. Gradually add the whole milk to the roux, whisking constantly until the mixture thickens and is smooth, about 5-7 minutes.
  5. Stir in the garlic powder, onion powder, paprika, salt, and pepper.
  6. Remove the saucepan from heat and add the cream cheese, stirring until melted and combined.
  7. Add the shredded cheddar, mozzarella, gouda, and grated parmesan to the sauce, stirring until all the cheese is melted and the sauce is creamy.
  8. Combine the cooked macaroni with the cheese sauce, mixing well to ensure all pasta is coated.
  9. If using breadcrumbs, mix them with olive oil in a small bowl.
  10. Pour the macaroni and cheese mixture into a greased 9×13 inch baking dish. If desired, sprinkle the breadcrumb mixture evenly on top.
  11. Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbly.
  12. Let cool for about 5 minutes before serving.
