  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning (about 1 ounce)
  • 1 cup water
  • 1 bag (12 ounces) tortilla chips
  • 2 cups shredded cheddar cheese
  • 1 cup black beans, drained and rinsed
  • 1 cup diced tomatoes (fresh or canned)
  • 1 cup sliced jalapeños (fresh or pickled)
  • 1 cup sour cream
  • 1 cup guacamole
  • 1/4 cup chopped fresh cilantro (optional)
  • 1/4 cup sliced green onions (optional)

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until soft, about 3-4 minutes.
  2. Add the minced garlic and cook for an additional 1 minute until fragrant.
  3. Add the ground beef to the skillet, breaking it apart with a spatula. Cook until browned, about 5-7 minutes.
  4. Stir in the taco seasoning and water. Simmer for 5 minutes, allowing the mixture to thicken slightly.
  5. Preheat your oven to 350°F (175°C).
  6. On a large baking sheet, spread out the tortilla chips in an even layer.
  7. Spoon the beef mixture evenly over the chips, then sprinkle the black beans, diced tomatoes, and sliced jalapeños on top.
  8. Generously sprinkle the shredded cheddar cheese over everything.
  9. Bake in the preheated oven for 10-15 minutes, or until the cheese is melted and bubbly.
  10. Remove from the oven and top with dollops of sour cream and guacamole. Garnish with chopped cilantro and sliced green onions if desired.
