A quick and delicious Egg Roll Stir Fry recipe that combines ground pork with fresh vegetables and savory sauces for a satisfying meal.

  • 1 pound ground pork (or ground turkey)
  • 1 teaspoon minced garlic
  • 1 teaspoon minced ginger
  • 4 cups coleslaw mix (shredded cabbage and carrots)
  • 1/4 cup soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1/2 teaspoon black pepper
  • 2 green onions, sliced
  • 1 tablespoon sesame seeds (optional)

Instructions

  1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the ground pork and cook until browned, breaking it apart with a spatula, about 5-7 minutes.
  3. Stir in the minced garlic and ginger, cooking for an additional 1-2 minutes until fragrant.
  4. Add the coleslaw mix to the skillet and stir well to combine. Cook for about 3-5 minutes until the cabbage is tender.
  5. Pour in the soy sauce, rice vinegar, sesame oil, and black pepper. Stir to coat all the ingredients evenly and cook for another 2-3 minutes.
  6. Remove from heat and stir in the sliced green onions.
  7. If desired, sprinkle with sesame seeds before serving.
