- 1 lb ground chicken
- 2 cloves garlic, minced
- 1 tbsp fresh ginger, grated (or 1 tsp ground)
- 2 tbsp green onions, finely chopped
- 2 tbsp cilantro, chopped
- 1 tbsp soy sauce or fish sauce
- 1 tbsp red curry paste
- 1 tsp sesame oil
- ½ cup panko breadcrumbs
- 1 large egg
- Salt & black pepper, to taste
- ¼ cup sweet chili sauce (for glaze, optional)
- 1 tbsp soy sauce (for glaze)
- 1 tsp lime juice (for glaze)
- 1 tsp honey or brown sugar (for glaze)
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a bowl, combine all meatball ingredients. Mix gently (don’t overmix).
- Roll into 1½-inch meatballs and place on baking sheet.
- Bake for 18–22 minutes, until cooked through (165°F internal temp).
- Brush meatballs with glaze and bake 2–3 minutes more (optional).
Notes
- Do not overmix the meatball mixture to keep them tender.
- Adjust the spice level by adding more or less red curry paste.
- Serve with extra sweet chili sauce for dipping.
