Delicious and easy-to-make Thai baked chicken meatballs that are perfect for satisfying your cravings.

Ingredients

  • 1 lb ground chicken
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, grated (or 1 tsp ground)
  • 2 tbsp green onions, finely chopped
  • 2 tbsp cilantro, chopped
  • 1 tbsp soy sauce or fish sauce
  • 1 tbsp red curry paste
  • 1 tsp sesame oil
  • ½ cup panko breadcrumbs
  • 1 large egg
  • Salt & black pepper, to taste
  • ¼ cup sweet chili sauce (for glaze, optional)
  • 1 tbsp soy sauce (for glaze)
  • 1 tsp lime juice (for glaze)
  • 1 tsp honey or brown sugar (for glaze)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a bowl, combine all meatball ingredients. Mix gently (don’t overmix).
  3. Roll into 1½-inch meatballs and place on baking sheet.
  4. Bake for 18–22 minutes, until cooked through (165°F internal temp).
  5. Brush meatballs with glaze and bake 2–3 minutes more (optional).

Notes

  • Do not overmix the meatball mixture to keep them tender.
  • Adjust the spice level by adding more or less red curry paste.
  • Serve with extra sweet chili sauce for dipping.
