1 ½ pounds beef round steak, cut into 1-inch pieces
1 teaspoon salt
½ teaspoon black pepper
¼ cup all-purpose flour
2 tablespoons vegetable oil
1 medium onion, sliced
1 bell pepper, sliced
2 cloves garlic, minced
1 (14.5-ounce) can diced tomatoes, undrained
1 cup beef broth
1 tablespoon Worcestershire sauce
1 teaspoon dried oregano
1 teaspoon dried basil
Instructions
Heat a large skillet over medium-high heat. Season the beef pieces with salt and pepper, then dredge them in flour, shaking off any excess.
Add the vegetable oil to the skillet. Once hot, add the beef pieces in a single layer. Brown the beef on all sides, about 5-7 minutes. You may need to do this in batches.
Remove the browned beef from the skillet and set aside. In the same skillet, add the sliced onion and bell pepper. Sauté for about 3-4 minutes until softened. Add the minced garlic and cook for an additional minute.
Return the beef to the skillet. Pour in the diced tomatoes (with juices), beef broth, Worcestershire sauce, oregano, and basil. Stir to combine.
Bring the mixture to a simmer, then reduce the heat to low. Cover and cook for about 1 ½ to 2 hours, or until the beef is tender. Stir occasionally and add more broth if needed to keep it from drying out.
Serve hot over rice or mashed potatoes.
Notes
For added flavor, consider marinating the beef in Worcestershire sauce for a few hours before cooking.
You can substitute the beef broth with red wine for a richer taste.
For a healthier option, add in some diced carrots or celery during the sautéing step.
