A simple and flavorful Mediterranean baked fish recipe that is perfect for a healthy dinner.

Ingredients

  • 2 (6-ounce) white fish fillets (such as cod or tilapia)
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 lemon, sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup Kalamata olives, pitted and halved
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Line a baking dish with parchment paper or lightly grease it with cooking spray.
  3. Place the fish fillets in the center of the baking dish.
  4. Drizzle olive oil over the fish, then sprinkle with oregano, garlic powder, paprika, salt, and pepper.
  5. Arrange lemon slices on top of the fish.
  6. Scatter cherry tomatoes and Kalamata olives around the fish in the baking dish.
  7. Bake in the preheated oven for 15-20 minutes, or until the fish flakes easily with a fork.
  8. Remove from the oven and garnish with fresh parsley before serving.

  • For a spicier kick, add a pinch of red pepper flakes to the seasoning.
