  • 2 large boneless, skinless chicken breasts (about 1 pound total)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 tablespoon olive oil
  • 1/2 cup crumbled feta cheese
  • 1/4 cup honey
  • 1 tablespoon red pepper flakes (adjust to taste)
  • 1 cup cherry tomatoes, halved
  • 1/2 cup Kalamata olives, pitted and halved
  • 1/4 cup fresh parsley, chopped
  • Juice of 1 lemon

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Pat the chicken breasts dry with paper towels and season both sides with salt, pepper, garlic powder, and oregano.
  3. In a large oven-safe skillet, heat the olive oil over medium-high heat. Add the seasoned chicken breasts and sear for about 4-5 minutes on each side until golden brown.
  4. While the chicken is cooking, mix the honey and red pepper flakes in a small bowl.
  5. Once the chicken is browned, remove the skillet from heat. Pour the honey mixture over the chicken, then sprinkle the crumbled feta cheese, cherry tomatoes, and olives on top.
  6. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through (internal temperature should reach 165°F).
  7. Remove from the oven, squeeze fresh lemon juice over the dish, and garnish with chopped parsley before serving.
