2 tablespoons olive oil
1 small onion, diced
2 cloves garlic, minced
1 pound cabbage, chopped
8 ounces mushrooms, sliced
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon paprika
1 tablespoon soy sauce (optional)
2 tablespoons apple cider vinegar
Instructions
Heat the olive oil in a large skillet over medium heat. Add the diced onion and sauté for about 3-4 minutes until it becomes translucent.
Stir in the minced garlic and cook for an additional 1 minute until fragrant.
Add the chopped cabbage to the skillet, stirring well to combine with the onions and garlic. Cook for about 5 minutes, stirring occasionally, until the cabbage begins to soften.
Add the sliced mushrooms, salt, black pepper, and paprika to the skillet. Continue to cook for another 5-7 minutes, stirring occasionally, until the mushrooms are tender and the cabbage is fully cooked.
If using, stir in the soy sauce and apple cider vinegar, cooking for an additional 2 minutes to combine the flavors.
Remove from heat and serve warm.
Notes
For a bit of heat, add red pepper flakes while cooking.
For a heartier dish, include cooked sausage or bacon for added flavor and protein.
