2 cups cooked chicken, shredded or diced
1 cup ham, diced
1 tablespoon olive oil
1 small onion, diced
2 cloves garlic, minced
4 cups chicken broth
1 cup heavy cream
1 teaspoon dried thyme
1 teaspoon dried basil
1 cup Swiss cheese, shredded
Salt and pepper to taste
Chopped fresh parsley for garnish
Instructions
In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for an additional minute until fragrant.
Pour in the chicken broth and bring to a boil. Add the shredded chicken, diced ham, thyme, and basil. Reduce the heat and let it simmer for 10 minutes.
Stir in the heavy cream and Swiss cheese, mixing until the cheese is melted and the soup is creamy. Season with salt and pepper to taste.
Allow the soup to simmer for another 5 minutes, stirring occasionally.
Serve hot, garnished with chopped fresh parsley.
Notes
For a lighter version, substitute half-and-half for the heavy cream and use low-sodium chicken broth.
Add some frozen peas or corn for extra vegetables and color in the soup.
