2 boneless, skinless chicken breasts
4 slices of ham
4 slices of Swiss cheese
1 cup all-purpose flour
2 large eggs
1 cup breadcrumbs
1 teaspoon garlic powder
1 teaspoon paprika
Salt and pepper to taste
1/4 cup olive oil
1 tablespoon Dijon mustard (optional)
1 tablespoon fresh parsley, chopped (for garnish)
Instructions
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.
Place each chicken breast between two pieces of plastic wrap. Use a meat mallet or rolling pin to gently pound the chicken to about 1/2 inch thick.
Season both sides of the chicken with salt, pepper, garlic powder, and paprika.
Lay 2 slices of ham and 2 slices of Swiss cheese on each chicken breast. Roll the chicken tightly, starting from one end, and secure with toothpicks if necessary.
Set up a breading station: Place the flour in one shallow dish, beat the eggs in a second dish, and combine the breadcrumbs with a pinch of salt and pepper in a third dish.
Dredge each chicken roll in flour, shaking off the excess. Dip into the beaten eggs, then coat with breadcrumbs, pressing gently to adhere.
In a large skillet, heat the olive oil over medium heat. Add the chicken rolls and cook for about 3-4 minutes on each side until golden brown.
Transfer the browned chicken to the prepared baking sheet and bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the cheese is melted.
If desired, mix Dijon mustard with a little olive oil and brush it over the chicken before serving for added flavor.
Remove from the oven, let cool for a few minutes, then garnish with fresh parsley before slicing and serving.
Notes
For a healthier version, use whole wheat breadcrumbs and bake the chicken instead of frying it in oil.
Add a slice of your favorite cheese, such as cheddar or provolone, for a different flavor profile.
