8 slices of whole grain bread
8 ounces of Brie cheese, sliced
1 cup fresh blackberries
2 tablespoons honey
4 tablespoons unsalted butter, softened
1 teaspoon fresh thyme leaves (optional)
Salt and pepper to taste
Instructions
Preheat a skillet or griddle over medium heat.
In a small bowl, mix the blackberries with honey, thyme, salt, and pepper. Gently mash the blackberries to release some juice but leave some whole for texture.
Spread 1 tablespoon of softened butter on one side of each slice of bread.
On the unbuttered side of four slices, layer the Brie cheese evenly, followed by a generous spoonful of the blackberry mixture.
Top with the remaining four slices of bread, buttered side facing out.
Place the sandwiches in the preheated skillet. Cook for about 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.
Remove from the skillet and let cool for a minute before slicing in half.
Notes
For a savory twist, add a few slices of crispy bacon or turkey to the sandwich before grilling.
Substitute the blackberries with other berries like raspberries or strawberries for a different flavor profile.
