  • 4 cups bok choy, chopped
  • 8 ounces mushrooms, sliced (shiitake or button)
  • 1 red bell pepper, sliced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon cornstarch mixed with 1 tablespoon water
  • Salt and pepper to taste
  • Cooked rice or noodles for serving

Instructions

  1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the garlic and ginger, sautéing for about 30 seconds until fragrant.
  3. Add the sliced mushrooms and red bell pepper, cooking for 3-4 minutes until the mushrooms are tender.
  4. Stir in the chopped bok choy and cook for an additional 2-3 minutes until wilted.
  5. Pour in the soy sauce and sesame oil, stirring to combine.
  6. Add the cornstarch mixture to the pan, stirring until the sauce thickens slightly.
  7. Season with salt and pepper to taste.
  8. Serve hot over cooked rice or noodles.
