A delicious and easy Dump and Bake Chicken Tzatziki Casserole Bowl that combines tender chicken, orzo pasta, and a creamy tzatziki sauce.

  • 2 cups cooked rotisserie chicken, shredded
  • 1 cup uncooked orzo pasta
  • 2 cups chicken broth
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 cup plain Greek yogurt
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried dill
  • 1 teaspoon lemon juice
  • Salt and pepper to taste
  • 1 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the shredded chicken, uncooked orzo, chicken broth, cherry tomatoes, and diced cucumber. Mix well.
  3. In a separate bowl, whisk together the Greek yogurt, olive oil, minced garlic, dried dill, lemon juice, salt, and pepper until smooth.
  4. Pour the yogurt mixture over the chicken and orzo mixture, stirring until everything is evenly coated.
  5. Transfer the mixture to a greased 9×13-inch baking dish, spreading it out evenly.
  6. Sprinkle the crumbled feta cheese on top.
  7. Cover the dish with aluminum foil and bake for 25 minutes.
  8. Remove the foil and bake for an additional 10-15 minutes, or until the orzo is tender and the top is slightly golden.
  9. Let it cool for a few minutes before garnishing with fresh parsley and serving.

  • For a vegetarian option, substitute the chicken with chickpeas or roasted vegetables.
