2 cups ripe bananas, mashed (about 4 medium bananas)
1 cup granulated sugar
1/2 cup brown sugar, packed
1/4 cup fresh lemon juice
1/4 cup dark rum
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
Instructions
In a large mixing bowl, combine the mashed bananas, granulated sugar, brown sugar, lemon juice, dark rum, vanilla extract, ground cinnamon, and salt. Stir until well combined.
Transfer the mixture to a large saucepan and cook over medium heat. Bring to a gentle boil, stirring frequently to prevent sticking.
Reduce the heat to low and let it simmer for about 30-40 minutes, stirring occasionally, until the mixture thickens to your desired consistency.
Remove from heat and let it cool slightly before transferring to sterilized jars.
Allow the jam to cool completely at room temperature, then seal the jars and refrigerate. The jam can be stored in the fridge for up to 2 weeks.
Notes
For a spicier kick, add a pinch of cayenne pepper or a dash of nutmeg to the mixture while cooking.
Substitute the dark rum with coconut rum for a tropical twist, or omit the alcohol entirely for a kid-friendly version.
