A refreshing Dill Pickle Pasta Salad that combines the tangy flavor of dill pickles with creamy dressing and pasta.

Ingredients

  • 8 ounces elbow macaroni
  • 1 cup dill pickles, chopped
  • 1/2 cup red onion, finely chopped
  • 1/2 cup celery, diced
  • 1/4 cup fresh dill, chopped (or 1 tablespoon dried dill)
  • 1 cup mayonnaise
  • 2 tablespoons pickle juice
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Cook the elbow macaroni according to package instructions until al dente. Drain and rinse under cold water to cool. Set aside.
  2. In a large mixing bowl, combine the chopped dill pickles, red onion, celery, and fresh dill.
  3. In a separate bowl, whisk together the mayonnaise, pickle juice, garlic powder, salt, and black pepper until smooth.
  4. Add the cooled macaroni to the vegetable mixture and pour the dressing over the top. Gently toss until everything is well coated.
  5. Cover the salad and refrigerate for at least 1 hour to allow the flavors to meld.
  6. Before serving, taste and adjust seasoning if necessary. Serve chilled.
