1 pound ground beef
6 slices bacon, chopped
1 small onion, diced
1 cup diced tomatoes (canned or fresh)
1 cup shredded cheddar cheese
1/2 cup heavy cream
4 large eggs
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon salt
1/2 teaspoon black pepper
1/4 cup dill pickles, chopped (optional)
1/4 cup green onions, sliced (for garnish, optional)
Instructions
Preheat the oven to 350°F.
In a large skillet over medium heat, cook the chopped bacon until crispy. Remove the bacon and drain on paper towels, leaving about 1 tablespoon of bacon grease in the skillet.
Add the diced onion to the skillet and sauté until translucent, about 3-4 minutes.
Add the ground beef and cook until browned, breaking it apart with a spatula. Drain excess fat if necessary.
Stir in the diced tomatoes, garlic powder, onion powder, salt, and black pepper. Cook for another 2-3 minutes, then remove from heat.
In a mixing bowl, whisk together the heavy cream and eggs until well combined.
Stir in the cooked beef mixture and half of the cheddar cheese.
Pour the mixture into a greased 9×13-inch baking dish. Top with the remaining cheddar cheese and the crispy bacon.
Bake in the preheated oven for 25-30 minutes, or until the casserole is set and the cheese is bubbly and golden.
Let the casserole cool for about 5 minutes before serving. Garnish with chopped dill pickles and green onions if desired.
Notes
For added flavor, mix in some Worcestershire sauce or mustard into the beef mixture.
You can substitute ground turkey or chicken for the beef for a lighter option.
